Hi there! So as my first post with any actual substance, I decided I just had to tell you about, and show you about, Sunday’s Father’s Day festivities. My family of about 13 came down to have a little get together in honor of the dads in our family, and I think I baked for about 30… But what fun is life without excess, right?
So first I endeavored to make mini peanut butter pies in oreo crust. My family went absolutely NUTS for these! I adapted this recipe from the lovely and talented Naomi from Bakers Royale. Instead of making a larger pie, I opted to make this peanutbuttery dream mini! So let’s see… we’ve now combined pretty much all of my favorite things… peanut butter, oreos, and mini things… these little pies are a dream come true.
The next dessert on my list was a little tribute to my dad: Banana Chocolate Fudge Cupcakes. My dad looooves chocolate covered bananas, so I decided to turn the tasty treat into a cupcake. I used this amazing banana cupcake recipe from Jessica at How Sweet It Is. Instead of following Jessica’s recipe, I opted to use my own chocolate buttercream frosting. These were my personal favorite… YUM! Banana deliciousness with rich chocolaty frosting… Simply decadent.

Finally, I thought we needed something light and fruity amongst all of the decadent chocolate goodness. This red velvet strawberry layer cake from i am baker was the PERFECT cake! It was absolutely humongous and delicious. It was light, but still oh-so-good.

Let’s just say no one went hungry in my house this Father’s Day…
